These Manic Monday Reviews will be short and sweet. There will be basic background information, a bottle review, and will be posted irregularly; unlike the weekly Friday reviews. These reviews will focus on older or past releases, single barrel releases, bottles that were lost or forgotten on my shelf, or whenever I just want to focus on the bourbon, not the write-up. With that said, today’s review is of Bardstown Bourbon Company Phifer Pavitt Cabernet Finish II.

From the Bardstown Bourbon Company website: Exceptional 10-year-old Tennessee straight bourbon whiskey. Polished in decadent Phifer Pavitt Reserve cabernet barrels from Napa Valley for 18 months.

So with that said, let’s get our taste on!

  • Nose: Very Fruit Forwarded (Cherry/Plum), Brown Sugar, Oak, and Chocolate
  • Palate: Chocolate Covered Raisins, Dark Chocolate, Plums, Cherry, Oak and Cabernet
  • Finish: Short with only Soft Notes of Cabernet and Oak
  • My Rating: Drink It!/Save It! (I will say that back in 2021 I was skeptical about purchasing this bottle as it was one of the first finished bottles I owned. In all honesty, this is the bottle that has caused me to try and purchase every Bardstown Bourbon Collaboration since, and is also why I have been nursing this for so long!)

Please remember, drinking bourbon is a personal adventure, so do not be afraid to drink it neat, with ice, or add some water. It’s your bourbon, you bought it, and you should enjoy it how you want to enjoy it!
