On a whim, The Mrs. and I decided to go on a date night and we ended up at a new establishment to us called William Oliver’s Colorado Pub and Eatery. With locations in Fort Collins and Lafayette Colorado, they boast themselves “As a neighborhood pub, our local community is our lifeblood.”
Let me say, if you live anywhere near either of there locations, this is a must go for bourbon and or bacon lovers! I indeed was not disappointed, their selection of bourbon and whiskies where amazing and the “Pint-o-Bacon” definitely hit the spot. The overall atmosphere was inviting, the service was great, and after finding out it was our first visit, the waitress provided us with a free flight of whiskey upon our next visit; this will be used.
While there, I was able to taste two wonderful bourbons, and the first of these two wraps up this year’s tastings of toasted bourbon. From the Heaven Hill Distillery, I was able to enjoy Elijah Craig Toasted Barrel Finish Straight Bourbon.
As stated from the website this bourbon is: Twice barreled for added complexity, Toasted Barrel takes our award-winning Small Batch Bourbon to new heights. After it’s fully matured, we finish this Bourbon in a second, custom toasted new oak barrel, where it’s left to develop even more sweet oak flavor.
Unfortunately, I have had no success in finding this bottle in Northern Colorado or the Metro Denver Area this year, so I made the decision to try this bourbon for $8; which was a 1.5 once pour. With that said, let’s get our taste on!
- Nose: Cinnamon, Sherry, Marshmallow, slight hints of Barrel Char.
- Palate: Vanilla, strong Gram Cracker, and as Light oak ending.
- Finish: Heat on the Tongue with a short but very pleasant finish.

Please remember, drinking bourbon is a personal adventure, so do not be afraid to drink it neat, with ice, or add some water. It’s your bourbon, you bought it, and you should enjoy it how you want to enjoy it!
