This weekend Mrs. Bourbon Bossman and I headed towards the city for a night out. On a whim, we headed towards Fort Collins (FoCo) and made an agreement that we would eat wherever the fate of parking would allow. For those who are not familiar with Downtown FoCo, there are now several new parking garages so space is not an issue most nights; however, when trying to find a spot on the street it is often left to fate.

As we arrived in FoCo, it was a typical Saturday night with no street parking and tons of people enjoying a beautiful Colorado spring night. We decided to circle downtown a few times looking for a spot, and just as we were going to give up and head towards south FoCo for dinner, a parking spot opened less than 200 feet from The Whisk(e)y and fate had chosen a location for us. I will say that I definitely seemed more excited than Mrs. Bourbon Bossman, probably because we were headed to a whiskey bar and Mrs. Bourbon Bossman does not drink. With that said, this was a location our good friends recommend, so we headed in for what would turn out to be an amazing night of enjoyment together.

Overall, the atmosphere of this bar/pub was stellar, with great music, excellent and knowledgeable service, delicious food, and an abundant selection of bourbon, whisk(e)y, and scotch. If I had to have one complaint about this entire night, it might be the above-average pricing for tastings as the in-house menu has increased twofold over the one found on their website. Nonetheless, I was able to try five bottles of bourbons and ryes that I will probably never have a chance to purchase a full bottle of. With that said, if you live in FoCo, Northern Colorado, or plan on visiting this area, please make sure to go get your taste on at The Whisk(e)y!

Please remember, drinking bourbon is a personal adventure, so do not be afraid to drink it neat, with ice, or add some water. It’s your bourbon, you bought it, and you should enjoy it how you want to enjoy it!
