My first experience with this distillery was a Christmas gift a little over a year ago. Since then, I have now managed to fill an entire one of my shelves with several of their products, and look forward to trying their new products whenever I can find them. Today’s review comes from the Still Austin Distillery and is the annual release of Still Austin Red Corn Bourbon Whiskey.

From the Still Austin website: For this Summer 2025 release—represented by the heat-loving snake and cactus—we combined the robust nuttiness of Jimmy Red corn with the sweet spice of rye. This release was a fan favorite when it was released last year, and with an additional year of aging, it might be even better.

Until just recently, it was quite hard to find anything from the Still Austin Distillery in Colorado or the NoCo area. Although their core lineup is now starting to show up on most of the shelves in my area, limited releases are still quite hard to come by, and this was the only bottle we saw. Overall, this bottle has amazingly balanced notes of cherry, vanilla, oak, and baking spice. I have no complaints about this bottle, and with this is the first limited release I have had from Still Austin, and I cannot wait to have more! With that said, let’s get our taste on!

  • Nose: Cherry, Vanilla, Candy Nuts, and Baking Spice
  • Palate: Vanilla, Maraschino Cherry, Baking Spice, Oak, and Marzipan
  • Finish: Medium with Notes of Sweet Oak and Baking Spice
  • My Rating: Drink It!/Save It! (This is the first limited release I have had from Still Austin, and I cannot wait to have more!)

Please remember, drinking bourbon is a personal adventure, so do not be afraid to drink it neat, with ice, or add some water. It’s your bourbon, you bought it, and you should enjoy it how you want to enjoy it!
