A huge thank you to High West Distillery and Ciarra for sending Monday’s and today’s bottles! As a reminder, these bottles were sent to me with no strings attached, so as always, this review will truly be my opinion of the product, no matter what. Today’s review comes from the High West Distillery and is their new High West Bottled-in-Bond Bourbon Batch No. 25G09.

Bottle Information

From the High West website: Our newest release, Bottled In Bond Bourbon, is a straight bourbon whiskey, produced in-house at our distillery in Wanship, Utah. It’s made in accordance with the standards laid out by the Bottled In Bond Act of 1897. This release is like a single vintage of wine, offering an intimate snapshot of the distiller’s process. One base spirit, crafted at a single distillery, by a single distiller, in a single distilling season. Must be aged a minimum of 4 years and bottled at 100 proof in a federally bonded warehouse.

  • Distiller: Distilled and Bottled by High West Distillery

  • Proof: 100

  • Year: 2025

This bottle has finally started to hit the shelves in the NoCo area. I have always been perplexed by the way it takes High West products so long to be released in Colorado when we are so close to the Distillery. Overall, this is a damn good bourbon for only being 4 years old and definitely a must-try! With notes of peach, honey, and vanilla that are found throughout the entire experience, this is a well-crafted bourbon for its age. With that said, let’s get our taste on!

  • Nose: Gummy Peach Rings, Honey, Graham Cracker, Vanilla, and Orange Peel
  • Palate: Vanilla, Peach, Honey, Baking Spice, and Toasted Oak
  • Finish: Medium to Long with Lasting Notes Peach, Honey and Oak
  • My Rating: Drink It! (This is a damn good bourbon for only being 4 years old and definitely a must try!)

Please remember, drinking bourbon is a personal adventure, so do not be afraid to drink it neat, with ice, or add some water. It’s your bourbon, you bought it, and you should enjoy it how you want to enjoy it!

Cheers! Prost! Sláinte!
