If you have read this blog before, then you know I am a fan of Redwood Empire Distilling. That said, when they release a new bottle, I am typically the first in line to try and find the bottle, enjoy it, and review it. Today’s review comes from Redwood Empire Distilling and is their new offering of Redwood Empire Pipe Dream Proof 101.

From the Redwood Empire website: Pipe Dream 101 highlights some of our favorite components of our signature bourbon. Maintaining a four-grain mash bill, this reserve expression showcases older whiskey stocks, more of our own grain-to-glass distillate and is cut at a higher proof. The result is a craft whiskey with elevated aromas, rich textures, and bold flavors. We’re proud to share Pipe Dream 101 with you.

When this bottle hit the NoCo area it came in stacks of boxes. One moment I was looking for this bottle and the next it was on every shelf throughout the area. Overall, this was a light bourbon that drank quite a bit hotter than the proof but had a great nose and palate. Unfortunately for me, the finish had a bit too much bitter nuttiness and drying oak so I will stick with the original offering! With that said, let’s get our taste on!
- Nose: Apple, Vanilla, Oak, Honey, and Caramel
- Palate: Caramel, Vanilla, Baking Spice, Nuttiness, Oak, and Honey
- Finish: Medium with Notes of Drying Oak, Baking Spice, and Bitter Nuttiness
- My Rating: Mix It! (Drinks a bit hot for the proof and ends in bitter nuttiness…I will stick with the original offering!)
Please remember, drinking bourbon is a personal adventure, so do not be afraid to drink it neat, with ice, or add some water. It’s your bourbon, you bought it, and you should enjoy it how you want to enjoy it!
