I must admit that when I stated this bourbon adventure, it was actually more like a whiskey adventure. Before falling in love with bourbon, many of my bottles were actually whiskey, with the first being a bottle of Redbreast 12 Year Old. Since then, I have diversified my palate, and although I still have a shelf of whiskey, most of my collection is now dominated by bottles of bourbon. Nonetheless, Red Breast will always have a place in my heart, and whenever this distillery releases a new or limited-release product, I make an effort to find that bottle. With that said, today’s review is on the 2022 Redbreast Irish Whiskey Pedro Ximenez (PX) Edition.
As stated on the bottle: UNIQUE among the family, Redbreast Pedro Ximenez edition is a SINGLE POT STILL WHISKEY, triple distilled, initially matured in BOURBON AND OLORSO SHERRY CASKS, before re-casked in delectable PEDRO XIMENEZ HOGHEADS for a sweet finish.
Knowing this bottle was being released in the 2nd quarter of 2022, I have had my eye out for quite a while. Finally, on a random Friday afternoon, one of my favorite stores had one on the shelf at MSRP; it quickly became mine. Unfortunately, I have yet to see a duplicate bottle in NoCo since. Overall, this is one of my top three bottles of 2022 so far, and quite possibly my whiskey of the year. With an amazing balance of sweet fruitiness, vanilla frosting, and with a tad bit of oak, Redbreast Irish Whiskey Pedro Ximenez (PX) Edition is an absolute hitter. If you see this bottle on the shelf, please buy another one for me and one for yourself! With that said, let’s get our taste on!
- Nose: Sweet Mixed-Berry Jam, Vanilla, Butterscotch, Orange Zest and Caramel Leading to Individual Fruit Notes of Apricots, Figs, Fuji Apples, and Blackberries
- Palate: Delicately Sweet with Notes of Buttercream, Vanilla Frosting, Mixed-Berries, Caramel, Raisins/Figs, Red Grapes and Oak.
- Finish: Sweet Medium Finish with Lingering Mixed-Berry Notes and Ending a Warm Oak and Vanilla Cream Frosting

- 2022 National Average: $150
- Proof: 92
- My Rating: Save it! (This is a contender for Whiskey of the Year!!)
Please remember, drinking bourbon is a personal adventure, so do not be afraid to drink it neat, with ice, or add some water. It’s your bourbon, you bought it, and you should enjoy it how you want to enjoy it!
Cheers! Prost! Sláinte!
